You ever have cornbread fritters in the summertime? Down south in the summer when it’s so hot, you don’t want to heat up your house by turning on the oven so what you do is, you make cornbread fritters instead of cornbread in the oven. Well some one came up with squash fritters and man they are good. Instead of cutting your squash in little circles or length ways, you stew them and you can add onions if you’d like and cook them until tender. Then you drain them well and you toss in some cornmeal and an egg and make patties or fritters out of them. I like yellow cornmeal so that’s what I use. I had a few left over today when I was canning some so I figured I would make us some corn fritters out of them and just had to share with you. Sure wish you could come to supper. ;)

Just wondering if you have ever made squash dressing? Yummy, yummy! And of COURSE we use yellow cornmeal. It's the best we think. We used to raise our own Yellow Jarvis corn and take it to the grist mill for home ground meal. I miss that!

You to Marilyn? I just LOVE yellow cornmean! I bet that was some awesome cornmeal to! I've tried it fresh ground but never could get my salt and baking powder mix right. IF I could get that right I would like it to.
Oh yeah made squash dressing, I think, it has hamburger meat and cheese in it? oh and onions and bell peppers?
Even though I buy my meal now I still buy the plain and add baking power. Have stopped even using salt because of our blood pressure issues. I hardly notice it any more.
Here is the squash dressing recipe:
2 cups stewed& drained squash
2 cups crumbled corn bread
1/2 cup butter
1 small onion, chopped
1 can cream of chicken soup
(I usually also add a pinch each of sage, thyme and black pepper)
Melt butter in skillet and saute onion for a few minutes. Mix with squash, cornbread and soup. Pour into greased 8 inch casserole dish. Bake about 30 minutes at 400.

I am looking for a recipe for squash fritters. I had one, but it disappeared. It was really good and so easy. I just need the correct measurements. It called for mashed yellow squash, flour, baking powder, corn meal. oil, egg, onion, milk
. I left out the onion and added just a hint of sugar; I dusted the hot fritters with confectioners sugar. They were great, but I can't find the recipe and I don't remember how much baking powder or oil it called for. Judy in Georgia
