Diets and Lifestyles

Isn’t it funny how fast things change for you sometimes. Well sometimes it’s NOT funny but sometimes it is.

My very last post was about pie crust. lol I didn’t even realize what I had posted about last and now I am not eating flour. In fact I threw part of those in the trash.

I went to my Dr. for my blood work results today was a week ago and she wanted me to start watching what I am eating so I can lose some weight. She asked me did I like to read and I said yes, so she said read Wheat Belly, by Dr. Davis. He’s a cardiologist that’s written a book about his findings with his patients in case you’ve never heard of him.

When I got finished at the Drs office we went and ate lunch and then we went to B.A.M. (Books A Million). We had planned on going there afterwards because hubby and I love just sitting in there, I on the lap top and he looking at the magazines. We do buy some every now and then.  Anyway I happen to think, let me see if they have this book the Dr. wants me to read. I went to look and they DID have it. I sit there and read a bunch of it and decided to save my money and not buy the book. I have it on hold at the library now, some one had it checked out. Anyway I figured since my hubby is retired now that I could use that money I’d spent on the book to buy the groceries I would need to change over to this lifestyle. I’d love to buy the book but just didn’t have it this time to do that. So I figured I would buy what we needed to at least get started on it.

I am really really craving some crackers and some pizza. I have found a lot of recipes on Dr. Davis’ blog as well as on Facebook and I have a cracker recipe I found on there. I think I have like two that I have found, one has flax seed in it.

Hubby and I are already feeling better. I can already tell a difference in the way I feel in less than one week. We started it on Wednesday.  Since I am a diabetic this is going to be really good for me and for him as well. We both are still eating too much for dinner and struggling with that. Not that we’re eating wheat but just need to watch the portions so we can lose more weight since dinner is in the evening and that needs to be a smaller meal than what we’re eating. We’ll get there I’m sure.

I have had so much trouble with my allergies for several months now. I don’t know if it’s the diet or what but they seem a little better for the past couple days.  I don’t feel so bloated feeling either. A few things we have noticed but since it’s just been close to a week now we’ll see if it’s the new lifestyle shortly.

We both are excited about this because everyone that has changed their lifestyle to wheat and grain free have seen loads of changes in their health, weight, pain, all sorts of things.

EDITED to add:
Hubby has lost even more weight. I haven't weighed yet. My joints are killing me like they were and I just feel so much better. It's totally amazing how much better I feel. Not bloated feeling at all. I had got to feeling like someone had hooked an air hose up to me and just blew me up. My breathing is also much better. My nose isn't as stuffy feeling as it was. I guess that's due to less inflammation from the wheat. SO GLAD my Dr. recommended me to read this book!!! Hubby is also feeling much better and isn't as grouchy as he was either. He wanted to join me in this because he also needed to lose weight, more than I do in fact. Since he retired he's gained a good bit of weight.

Cooking for the Super Bowl Snacks

 

Pumpkin Pie and Crust

I played around with some ideas I had for snacking. I found a recipe on Google and decided to try it. It’s a recipe for a pie pastry without having to roll it. LOVE that! It’s called PAT-In-The-Pan PIE CRUST

It was VERY easy to make and felt so nice and soft. LOVED the feel of it and did I say it was EASY to make? How cool is that?

This is what I wanted to do with it. These are little mini muffin tins. I wanted to make some individual pumpkin pies. I’m a diabetic so I used Splenda as my sweetener. The main reason I did this is because I had taken out a pack of my pumpkin puree the other day and sit it in the fridge and it NEEDED cooking. I had planned on putting it in a yellow cake mix which is ALSO good. But decided to just do this with it. Oh, if you’re interested in doing the cake mix one…… all you have to do is use the large can of pumpkin in the cake mix. That’s ALL you add to the cake mix. It’s very yummy. Found that one online to but don’t remember where, sorry.

Then here’s the two extra ones for the freezer. This is a tiny bowl, but  you can’t tell from the pic. I LOVE these old bowls! LOVE LOVE LOVE em!

And here’s the pumpkin pie filling. I also googled that one and found it on Simply Recipes.com. It is called, Suzanne's Old Fashioned Pumpkin Pie. I didn’t add cardamon, nor lemon zest and I just used non fat evaporated milk for my milk. I also didn’t add but 2 eggs to it and no brown sugar. I used Splenda and I really added a little too much. I think it said 1/3 cup sugar if I am remembering right and I added that in Splenda but then went back and added another 1/2 cup and I shouldn’t added that extra half cup. Sad smile

I almost forgot to take a pic of one of the pans. I had put it into the oven and had to get it out. It had already started to swell up. I think I added too much filling to my crust though. Live and learn huh?

Then I also… Baked Tators

It’s all Lydia’s fault. I was watching Lydia on PBS this morning and she was baking some french fries in the oven. I caught the end of it but I think she had added olive oil to the pan. Anyway I got the idea to bake some tator rounds. This is what I did.

I washed my potatoes real well and then I sliced them into circles, I didn’t peel them. I poured about 3 tablespoons of olive oil in my large cookie sheet that I have, and smeared it around the pan. I put the tator circles in and then I sprinkled some no salt seasonings on them.  I get the no salt seasonings at Big Lots. Then I added garlic powder and then sharp cheddar cheese sprinkled all over the tops of them. Baked them on like 275 degrees until they got tender then I turned the oven up to 350 degrees to brown them. They are really good. Hubby had to steal one early before the game started. lol And here’s a pic of the tators.

Some I put some string cheese that I had on them because I ran out of the sharp cheddar cheese. They’re the ones on the left side.

Sewing Room Wall Shelves

We have finally got the shelves made for the sewing room. I want to show you the before pic first.

And here is the process of making it. Hubby and I painted it before they put it together so we wouldn’t have the paint smell inside.

Then we stood it up and started putting in the horizontal shelves.

Got a couple more rows of them in.

Now got the rod for hanging things on. Then asked him to do one more shelf above the rod so I would have one more shelf to put things on. You can NEVER have too many storage areas!

Close up of the hanging rod and the shelf. I’ve got to prime and paint the 1x4 boards the color of the siding so they wont be noticeable. See the black screw heads on the boards? I filled in all of them last night with the wood putty. Then tonight I did the touch ups with the paint. Now ALL I lack is these little 1x4 boards and it will be finished!

Here’s a pic with things in it so you can see the details better. It wasn’t finished when I added all this stuff to it. I just did that to show the details better. There will be milk crates along the bottom of it to store things in. They will all be covered in fabric so you wont know what’s inside and you wont be able to see the milk crate at all.

It looks much better doesn’t it? Hopefully tomorrow I can start putting the things in there. Got to get some paint for those 1x4 boards in almond, the color of the vinyl siding. I can at least get started putting my things in this side of it for right now. I’m hoping with day time gets here I wont find any places I need to touch up. You know how it is, you get your paint brush all cleaned up and then you find something you missed. lol
I have the heater on in there now so the paint will get nice and dry since it’s raining outside today. Sure is nice to have one more project done and behind me. Maybe now I can organize my things. Also I have got to get all this fabric of mine folded on their foam boards so I can stick it in the shelves with the other fabric I already have folded up.
When I get the things in there I will come back and post a couple more pix for you. I also want to get the covers made for the milk crates to. Hang in there with me and I will get it done and post more pix.
UPDATE: Added some things yesterday to the shelf after it was all finished……
